Banana Pancakes
What you'll need:
1/2 cup coconut flour
1/2 flaxseed meal
1 cup almond meal
1/2 tsp baking soda
1/2 apple cider vinegar
1 tsp vanilla
3 eggs
1 cup coconut milk
1/4 to 1/2 cup honey
2 to 3 small bananas cut up
Mix all ingredients in order.
Make sure to pour the apple cider vinegar on top of the baking soda for
the chemical reaction.
Once the reaction is complete continue to add the rest of the ingredients.
Mix well.
I like the banana a little chunky in my pancakes as I do not mash them till smooth.
I just mix until it's well mixed but still lumpy.
If you want it thinner pancake add a little more coconut milk.
If you want it thinker add a little more coconut flour.
Pour small amounts of batter into a heated pan or griddle.
Once one side is cooked and browned flip and cook the other side.
Serve with a drizzle of honey.
