Winter Squash Bacon Soup

Winter Squash Bacon Soup 


Very very good!!

How to make this:
Two medium winter squash 
3 TBSP grape seed oil
3 cloves of garlic (smashed)
1 medium onion (chopped)
1/2 head of cauliflower
1/2 cup water
1/2 to 1 cup half and half or heavy cream (depends on how thick you want it)
Peppered Bacon
 or bacon and add pepper
2 tsp sage
salt to taste

Pre heat oven to 400.
Two medium size winter squash. 
Cut in half and roast for 30 to 40 min. 
Winter squash fresh from our garden.

While squash is cooling some 
 in a large pot that can go in the oven 
heat oil then put in 3 smashed cloves of garlic
add chopped onion.
Let those brown a little.
Then add cauliflower some steams and florets.
Scoop out the insides of the squash and add to pot. 
Put on lid then stick in oven and roast for 30 to 40 mins. 
Take out of oven pour into blender or food processor 
add liquids and seasoning, mix on low for a few minutes.
In pot brown up the bacon. 
Once cooked add that to the soup mixture and mix for 3 seconds. 
You want you bacon flavor to mix but not get chopped to bits. :) 

Make sure to taste your soup add more seasoning if needed.
If you like it thicker add less liquid, if you want it thinner add more liquid.
Can be made with broth or just water if you don't want the dairy. 
Would be great topped with cheese and or sour cream.
Tastes like a creamy potato soup but no potatoes are in it.
